- 4 gousses d’ail
- 1 cc de gros sel marin
- 1 cc de graines de cumin
- 2 cs de vinaigre de vin rouge
- ¼ l d’huile d’olive vierge extra

Note perso :

I consider to be myself in the category of the “naughty guys” since I abandoned the mortar and the pestle for my Thermomix… And then, in good iconoclast, I put mojo verde everywhere, not only on the fish…
Ingredients for 1/3 litre of sauce:

- 1bunch fresh coriander
- 4 cloves of garlic
- 1 tsp of coarse sea salt
- 1 tsp cumin seeds
- 2 tablespoons of red wine vinegar
- ¼ l of extra virgin olive oil

Preparation: 30 minutes

Put everything in the bowl of a blender, for me my Thermomix, and mount in speed gradually. Be careful not to make porridge.

Notes:

1. This typical Canary Islands sauce is served in a bowl in the middle of the table. Traditionally accompanies grilled fish, but also the famous salted potatoes cooked in sea water and the grills of all kinds.

2 Whatever anyone says, it keeps well in the fridge and I personnally find that perfumes have had time to blend well.

3. Some canarios add, in addition to vinegar, a dash of white wine dry.

To be true, I had a few misgivings, fear that the taste of certain spices prevail, but it wasn't. I just coated the piece of fish on all sides with a brush and I stored it a few hours in the refrigerator, under cling film.

The result was a flesh tender and tasty and fragrant, perfectly accommodating fresh spinach sautéed and of small steamed "ratte" potatoes.

I decreased the quantities for the marinade by dividing by 2, and it remains me a small jar that I keep in the refrigerator.

For the marinade:

10 g of star anise (star anise) powder

8 g of ground cilantro

8 g of sweet paprika

5 g of whole cumin

10 g of chopped garlic

50 g of red pepper in thin mirepoix

25 g chopped shallots

20 g or a nice bunch of chopped Basil

15 cl of olive oil

2 pressed lemons

5 g thyme flower

5 g of "fleur de sel" of Guérande

Put the star anise and coriander in the Thermomix and mix 30 s at speed 10.

Add the remaining ingredients and mix again 30 seconds on 7.

Apply the marinade with a brush, let stand 4 to 6 hours or prepare the night before for the next day...

A few minutes before cooking: Sprinkle your fish of 30 g of nature sesame seeds

When the time comes, preheat the griddle to 200 ° C.

Cook fish about 5 min per side.

In reality, the cooking time will depend on the thickness of your piece of fish.

Serve 4.

4 slices of pork in the spine
Demi-Glace in powder

For the marinade:
250 ml of orange juice
25 ml of soy sauce
1 case of balsamic vinegar
1 case of honey

For the croquettes:
2 Zucchini
2 carrots
2 eggs
Grated onions
1 tbsp of flour
1 tbsp of chestnuts flour
Salt and pepper

For the griddle:
Coconut oil

Prepare the marinade and marinate the meat for a few hours. Ideally, overnight.

Prepare the croquettes.

Begin by shredding Zucchini and carrots with a grater with big holes. Mix with the remaining ingredients.

Preheat the griddle to 200 ° C and drain meat while keeping the marinade.

In a small saucepan bring the marinade to a gentle boil, bind with Demi-Glace sauce, whisk the sauce so that it is smooth and homogeneous, then keep warm.

Form croquettes by hand and place on one half of the griddle lightly oiled with coconut oil.

On the other half, place 4 slices of pork.

Turn the patties and meat after 3 or 4 minutes. Continue cooking for 3 or 4 minutes.

Serve with the sauce.

There are dozens of rhubarb curd recipes on the web. But all are made by hand, with all the drawbacks you may experience: constant presence, individual touch missed, etc... That was until Cooking Julia writes the recipe for Thermomix. Recipe that I have adopted and relayed on this blog as I liked so much this curd.

Her recipe is impeccable and perfectly codified and the result is at the height of my hopes: a fantastic recipe, I have not stopped to lick the spoon and the bottom of the Thermomix Bowl...

I see possibilities for variants:

-the addition of a hint of food coloring to give the pink side of the rhubarb.
-Add a little bit of cardamom or ginger. But very light, filigree...

And then add it to eat a yoghurt, white cheese, a pancake, a slice of bread or simply the spoon by gluttony.

Here is the recipe for 2 jars of rhubarb curd:

600 g of rhubarb, peeled, cut into 3 cm pieces
30 g sugar (1)
120 g sugar (2)
3 egg yolks
50 g of butter

Put sections of rhubarb with sugar (1) in Thermomix Bowl. Set 15 minutes, 100 ° C, 2 speed.

Let cool in the bowl, at a temperature below 60 ° C.

Add of sugar (2) and the egg yolks. Set 6 minutes at 80 ° C. The mixture should be slightly thicker that English a cream. Mix 15 seconds at speed 9 to smooth out the mixture. Add the butter in small pieces and mix on speed 3.

Put in jars.

Will keep a week in the refrigerator.

Hop, hop... A vos Thermomix.

Certainly, Julia strikes still very strong with her super recipe of turkey ham... It's simple, it's fast, it's beautiful and it's good... So, what do you expect? Hop, hop... At your Thermomix.

I have not changed a comma to the recipe of Julia that I reproduce below in full. This is not plagiarism, it is simply that the recipe is good and that there's nothing to change.

But still, I would like to explore some variations the next time such as the use of pimentón instead of paprika or the addition of 1 or 2 egg whites and, if it's worth it, I'll write an addendum to this post.

Julia spice Turkey ham

Ingredients:

Turkey Breast 500 g
1 cube of dehydrated chicken stock
1 tbsp paprika
1 tbsp of sweet pepper
1 tbsp Curry
Salt, pepper

Preparation
Cut the Turkey into pieces, after removing fat and tendons. In the Thermomix Bowl, put the pieces and broth cube. Salt and pepper. 3 pulse of turbo and program 10 seconds, speed 6. Scrape down the sides of the bowl. Start over 15 seconds, speed 7. Empty the contents of the Bowl on the work plan. Form a "fat sausage" with the meat.

In a ramekin, mix 3 spices. Coat the bead with this mixture.

Cut 5 large rectangles of cling film. Install the sausage in the center of the first and tighten film all around.

Twist both ends. Do the same with the other 4 sheets of cling film.
Place the sausage in the Varoma. Fill the bowl of the Thermomix with 1 litre of water. Place the Varoma in place and Bake 35 minutes, Varoma, speed 1. Turn it upside down after half of the time

Allow to cool then remove the several cling film layers.
Place the ham of Turkey in the refrigerator. Serve cut into thin slices.

I put it on this blog for future reference.

550 g of rhubarb, peeled and cut into chunks
400 g sugar gelling

I had found these Jerusalem artichokes a small veggies shop. It is fine to buy them, but how to prepare them? The recipes aren't so many and generally are around mashed or sauteed in the pan. I deliberately chose a different path and we appreciated.

For 2 persons:

500 g Jerusalem artichokes
200 g of diced roasted chicken
250 ml of béchamel Thermomix
-reduce flour by 1/3 to have a more liquid sauce

Pour 800 g water into Thermomix Bowl, install the Varoma with Jerusalem artichokes and cook 25 minutes, Varoma temperature, speed 2.

At the ringing tone put Jerusalem artichokes aside and let them cool.

Preheat oven to 180 ° C, fan.

Empty the Thermomix Bowl and prepare the béchamel sauce.

As soon as you can manipulate them, peel the Jerusalem artichokes and cut into regular slices. Place the slices in a bowl with chicken. Pour the béchamel sauce over and mix well.

Share into 2 small casseroles (or oven safe plates) and bake 40 minutes.

Serve with a tangy green salad.

For 4 guests, you will need:

The tops of a bunch of radishes

1 large handful of rucola

2 carrots

1 onion

1 tbsp olive oil

2 tsps Thermomix vegetable stock concentrate

Salt (little) and pepper to taste

Double cream

Separate the leaves of radish themselves. Reserve radishes for another use. Clean the leaves in several changes of fresh water. Drain.

Prepare the rucola in the same way.

Peel the onion, cut into 4 and place in the bowl of the Thermomix. Then chop speed 6 during 5 sec.

Add the olive oil in the bowl, scraping down the bowl and cook 5 min at 100 ° C, speed 1.

Add the radish leaves and proceed 5 sec speed 5. Do the same with rucola and carrots.

Add 1 liter of water and cook for 20 minutes at 100 ° C and 2 speed.

A ringing, add the cream and then smooth 30 sec. at speed 10.

Serve without delay.

First, I'd like to thank Julia whose recipe inspired me. We did something similar, my granddaughter Eloise and me, and this cream has had success: everyone wants to get some again.

We used the LadyMaxx from Aldi, an appliance that looks like a Thermomix. Albeit it does not offer a comprehensive range of speeds and temperature, it allows to cook a few dishes.

Here is the recipe:

For five small pots:

500 ml of milk
6 tsp cornflour
6 tsp caster sugar
5 type spiced biscuits
(here the Spanish cinnamon biscuits)
1/4 teaspoon cinnamon
1 pinch ground cloves

Put the sugar, biscuits, cornstarch, cinnamon and clove in the bowl. Pulverize 15 sec speed 2 (Corresponds to the speed 6 of TM31).

Add 500 ml of milk and cook for 5 min at 70 ° C

Smooth 30 seconds to speed 2 and divide into 5 small jars of 100 ml.

Let cool and store in the fridge.

You have in Platja d'Aro, Catalonia, where I spend my holidays, a brand new Aldi store that has just opened whilst the old shop closes and sells off its stock before final closure.

I purchased a Ladymaxx blender-cooker, presented as a rival of the TMX31, priced at 199 € instead of 1100 ... Except that I paid 100 € as it was sold off.

I thought that at this price, I did not take any risk and it was good enough to equip a holiday apartment.

First impression, I got an appliance for the 100 euros I paid for! Don't dream, when you pay peanuts, you get monkeys...

The bowl is smaller.

The temperature range:

3 possible temperatures: Ambient 70 to 100 ° C

A strong tendency to overheat and to attach.

The range of speed:

Cold: 3 speed that I think they correspond to 4, 6 and 7 of TM31

Warm: single speed which should correspond to the 2-3 TM31

1 turbo button that corresponds to the fastest speed. Note that this button will only work if the bowl temperature is below 50 ° C, which is a good point.

A great lack for me: no steamer or Varoma. I'll try to tinker a little if I find a bamboo basket of suitable diameter.

First rather disappointing results:

The risotto has become rice porridge whilst following exactly the recipe of the book.

Bolognese sauce has become porridge

The vegetable soup is correct

Bechamel is very thick but this can be easily corrected

The muffin batter made by my granddaughter Eloise was good

The strawberry sorbet was appreciated unanimously

It lacks a slow speed.

First impressions:

When we used a TMX, one remains on an unfinished impression and I greatly prefer the old TM21 to the Ladymaxx.

No way to make a stew, the slowest speed is too fast and chop foods, even with the throttle hard. Lack spreading speeds is deeply felt.

For temperatures, I would tend to caricature by saying that there are only two temperatures: too cold or too hot ...

And of course, no steaming.

That said, for occasional use on holiday and if you are not too demanding, this device can render some small services in your kitchen.

We left the 35 °C in Thailand for the 2 °C in the Paris region. The need for a soup is becoming increasingly pressing, and I'm going tonight for an endive velouté. There are plethora of recipes of endive velouté on the web but mine stands out a little spicy note by adding curry powder.

Serves 2:

Herbes aromatiques :
romarin, thym, persil, laurier

Programmez 25 minutes / Varoma / vitesse 2.

I searched the blogosphere looking for a recipe. The following was relayed by many blogs and I am in the penalty to cite all my sources. I adapted this to my needs

300 g of skinless chicken
200 g of aromatic vegetables:
-celery, onion, garlic, leek, cut into pieces
Aromatic herbs:
Rosemary, thyme, parsley, bay leave
150 g coarse salt
100 g white wine
1 nail of clove

The ring, remove the basket and put the measuring cup then mix 1 minute / speed 10. Pour the dough obtained in an airtight jar and let cool.

I usually do my mayonnaise by hand with good results. I wanted to try with the Thermomix and I must confess that, like what is done with this device, it is simple and fast.

The recipe in it is trivial but the result is stunning, even for a small amount. And the taste has nothing to do with mayonnaise doctored in the food industry.

For 1 small ramekin:

1 egg yolk
10 g of mustard
1 Cap full of oil (100 ml)
1 cac of lemon juice
1 pinch of Espelette pepper

Place the whisk and then put the first 2 ingredients in Thermomix Bowl. Place the CAP and pour the oil on the top of the lid. Program 1 min 30 s at speed 4. Oil will sink slowly into the bowl and to emulsify.

At the ringing tone, open Bowl and scrape down. Add the last 2 ingredients, taking care not to put on the knives, they is blend not properly. Program 30 s at speed 4.

At the ringing tone, put in a ramekin.

I do not add salt as I find that the mustard is already sufficiently salty.

This time, Cooking Julia has put the bar very high since she provides us with an excellent recipe of couscous with chicken in the Thermomix. Purists will howl, she exclaims, but enriched couscous with several meat, chicken, lamb (scrag end and chops), merguez saussages, is a french dish. In the Maghreb, couscous is prepared with a single meat, usually an old hen that lays more or a piece of mutton, but not both at the same time. In Tunisia they use fish...

The specification of Julia is simple:

- make a quick recipe in the Thermomix
- no use of fatty meats in favor of chicken meat which is lean
- have something tasty on his plate

Bravo Julia, it is successful, there is nothing to change. I adapted the recipe for 2 people because we are only 2 at home. I have added the smen, salted clarified butter used in the Maghreb.

For 2 people, need you:

1 small onion
1 clove garlic
2 tomatoes
2 carrots
1 small Zucchini
100 g of medium grain couscous
2 tbsps of raisins
1/2 can of chickpeas
2 chicken breasts
- trim in the thickness if they are too thick
Ras el hanout, according to taste
Salt and pepper
3 tsps of oil
Smen
Harissa

In the Thermomix Bowl, put the onion and the clove of garlic peeled and cut in half, as well as the tomatoes washed and cut into four. Program 5 seconds, speed 5. Scrape down the sides of the bowl. Pour 2 tsps of oil, Ras el hanout (amount according to taste), salt and pepper and set 4 minutes, 100 °, speed 1. At the ringing tone, add 250 grams of water.

In the steam basket, at the bottom have peeled and sliced carrots and Zucchini detailed into small pieces. Put in place the steam basket in the bowl, close the lid and set 10 minutes, Varoma, speed 1.

Meanwhile, pour the couscous in a bowl. Season with salt and add a teaspoon of oil and a hint of smen (clarified butter) knife. Pour hot water on the couscous, so cover it widely (follow the directions in the box). Let inflate 5 minutes covered, then refine with a fork and add the raisins. Mix well.

Remove the Bowl steam basket and transfer the vegetables into the Varoma. Spread over the chickpeas and the chicken breasts. Have the couscous on the steam tray. Possibly add some water back in the Thermomix bowl if the sauce seems too thick. Put a hint of smen to flavor the broth. Close the bowl, put all the elements in place and program 10 minutes, Varoma, speed 1.

Serve the vegetables in the sauce with the chicken and the seed. Propose the Harissa to amateurs.

Enfournez 30 minutes.

Envoyez avec une salade verte.

During our Norman week, we had lunch in Bayeux at the "Trou normand", place that I recommend, and there were "Norman Leontines" à la carte. After having tasted the dish, well invigorating on the other hand, I tried to reproduce it at home and the result is almost identical to what we had eaten.

Here's how it goes for 4 people

1 puff pastry Thermomix
1 tbsp of applesauce
1 Sweet Onion
1 tbsp of butter
200 g of potatoes
250 g of chicken breast
160 ml of fresh cream
80 g of raw milk camembert
1 tbsp of old-fashioned mustard
Salt and white pepper

Start by making a Thermomix puff pastry that you will put on a plate in the refrigerator.

During that time, chop Onion 5 sec, speed 6, scrape down. Add the butter and applesauce, Cook 8 min, speed 2, varoma temperature. set aside.

Without rinsing, put 500 grams of water in the bowl. Install the basket cooking with peeled potatoes, sliced. Install the varoma with chicken breasts and set 20 minutes, temperature varoma, speed 2.

At the ringing tone, set aside. Preheat the oven to 180 ° C, fan.

Discard the remaining water as there are in the bowl and then put cream, diced camembert, a pinch of salt (little), a tour of pepper and program 6 minutes, 80 ° C, 3-speed. At the ringtone, add a tbsp of mustard to the former and extend cooking for 1 minute.

Cut the puff pastry into 4 equal parts. Lower each part in the shape of rectangle of the same size. Fold the edge on them, ca. 1/2 cm, to form a ledge. Put these rectangles of dough on a backing sheet lined with baking paper.

Spread each rectangle of onion Compote, then potatoes, then the thin slices of chicken and drizzle with camembert sauce.

Bake 30 minutes.

Eat with a green salad.

By browsing through the excellent blog of Julia, Cooking Julia, I came in judgment before her recipe for chicken ham. What made me think of a similar recipe that is one of the symbols of Bavaria with the Bretz'n and beer: the Leberkäse. So I went immediately look up the ingredients that missed me and put the Thermomix at work.

For 4 people will need you:

lean beef 400 g
lean pork 400 g
200 g fresh rindless Bacon
2 g of white pepper, freshly ground
15 g salt
1/4 litre of lukewarm water
2 egg whites
1 onion medium
1 tablespoon Marjoram

Put the meat 1/2 hour in the freezer. Its consistency should be the one just before freezing.

Preheat the oven to 160 ° C, fan.

Cut the meat into cubes that you will put in the bowl of the Thermomix with all remaining ingredients except water and egg whites.

Set 10 sec, speed 6.

Scrape down, add water and egg whites, set 30 sec, speed 8. You must obtain a smooth mass.

Grease a cake pan, fill with the preparation made for the Thermomix. Smooth top with a spatula dipped in a little water.

Bake 35 min on a rack placed halfway up in the oven.

To serve, the traditional way in Bavaria: cut slices of the thickness of a finger. Fry them in a frying pan. Serve with an egg on horseback and a pretzel, and a Bavarian beer.
