Rhubarbe curd - Rhubarb curd

Des recettes de rhubarb curd, il y en a des dizaines sur la toile. Mais toutes se font à la main, avec tous les inconvénients qu'il peut y avoir : présence constante, tour de main loupé, etc... Ca, c'était jusqu'à ce que Cooking Julia ne mette au point la recette pour Thermomix. Recette que j'ai adopté et que je relaie sur ce blog tant j'ai aimé ce curd.


Sa recette est impeccable et parfaitement codifiée et le résultat est à la hauteur de mes espérances : une tuerie, je n'ai pas arrêté de lécher la cuillère et le fond du bol du Thermomix...

J'y vois des possibilités de variantes :

- l'ajout d'un soupçon de colorant alimentaire pour redonner le côté rosé de la rhubarbe.
- y adjoindre un petit peu de cardamome ou de gingembre. Mais très léger, en filigrane...

Et puis, à déguster sur un yaourt, un fromage blanc, une crêpe, une tartine ou tout simplement à la petite cuiller, par gourmandise.

Voici la recette pour 2 pots de curd :

600 g de rhubarbe, épluchée, en tronçons de 3 cm
30 g de sucre (1)
120 g de sucre (2)
3 jaunes d'œuf
50 g de beurre

Mettre les tronçons de rhubarbe avec 30 g de sucre dans le bol du Thermomix. Programmer 15 minutes, 100°C, vitesse 2.

Laisser refroidir, dans le bol, à une température inférieure à 60°C.

Ajouter 120 g de sucre et les jaunes d'œuf. Programmer 6 minutes à 80°C. Le mélange doit être légèrement plus épais qu'une crème anglaise. Mixer 15 secondes à vitesse 9 pour lisser le mélange. Ajouter le beurre en petits morceaux et mélanger à vitesse 3.

Mettre en pots.

Se conserve une semaine au réfrigérateur.

I see possibilities for variants:

-the addition of a hint of food coloring to give the pink side of the rhubarb.
-Add a little bit of cardamom or ginger. But very light, filigree...

And then add it to eat a yoghurt, white cheese, a pancake, a slice of bread or simply the spoon by gluttony.

Here is the recipe for 2 jars of rhubarb curd:

600 g of rhubarb, peeled, cut into 3 cm pieces
30 g sugar (1)
120 g sugar (2)
3 egg yolks
50 g of butter

Put sections of rhubarb with sugar (1) in Thermomix Bowl. Set 15 minutes, 100 ° C, 2 speed.

Let cool in the bowl, at a temperature below 60 ° C.

Add of sugar (2) and the egg yolks. Set 6 minutes at 80 ° C. The mixture should be slightly thicker that English a cream. Mix 15 seconds at speed 9 to smooth out the mixture. Add the butter in small pieces and mix on speed 3.

Put in jars.

Will keep a week in the refrigerator.
