Noix de pétoncle et fondue de poireaux - Scallops and leek fondue

Cette fois ci, ce sera une recette faite à la plancha. Oh quelque chose de très simple, histoire de tester le "kari Gosse", assaisonnement nouvellement arrivé dans ma cuisine. Le kari Gosse a été créé à la fin du 19ème siècle par M. Gosse, un apothicaire de Lorient, sur une base de curry indien. Basiquement, c'est une des nombreuses variétés de poudre à curry, relevé d'un soupçon de piment. C'est devenu depuis un des assaisonnement favori des cuisiniers breton et il relève agréablement fruits de mer et crustacées.

Pour 2 :

400 g de pétoncles
500 g de poireaux coupés en rondelles
Beurre
Crème fraîche
Fleur de sel
Kari Gosse

Mettez la plancha en chauffe. Un coté à 150°C, l'autre à 250°C.

Déposez les poireaux coupés en rondelles sur l'endroit chauffé à 150°C, avec un peu de beurre. Remuez à la spatule, baissez le feu sur 100°C et recouvrez d'une cloche, les poireaux vont cuire à l'étouffé.

Quand les poireaux sont cuits, versez dessus 2 bonnes cuillers à soupe de crème fraîche, une pointe de couteau de kari Gosse, salez légèrement, mélangez à la spatule, coupez le feu et recouvrez avec la cloche pour garder au chaud.

Sur la partie chauffée à 300°C, baissez la température à 250°C, huilez au pinceau et jetez les noix de pétoncle dessus. Remuez sans arrêt avec une spatule, pendant 1min 30 à 1min 45: les noix doivent être saisies à l'extérieur et encore translucide à l'intérieur.

Dressez sur une assiette avec du riz

For 2 persons:

Flan de courges - Squash flan

C’est l’automne, c’est la saison des courges et potirons qui envahissent nos étals. Nous avions envie de quelque chose qui change, de moins classique du sempiternel gratin et de la non moins sempiternelle purée.

Et si nous en faisions un flan ?

Pour 6 portions :

1 courge musquée
40 g de farine de châtaignes
3 œufs
1 yaourt nature
Sel et poivre

Tout d'abord, fendre la courge en 2, en retirer les fibres et pépins puis, la couper en gros morceaux, sans la peler. Disposer les morceaux face coupée vers le bas dans le Varoma.

Mettre un litre d'eau dans le bol, fermer le TMX, disposer le Varoma dessus et cuire 40 min, Vitesse 2 à temp Varoma.

A la sonnerie, laisser refroidir un peu, le temps que les morceaux soient manipulables. Vider le bol, installer le fouet papillon. Préchauffer le four à 180°C, chaleur tournante.

Racler la chair et la mettre dans le bol. Jeter la peau. Ajouter les autres ingrédients et procéder 1 minute, vitesse 3. Verser dans un moule à manqué et enfourner 1 heure.


A servir seul avec une salade ou en accompagnement de viandes.

Scrape the flesh and put it in the bowl. Discard the skin. Add the other ingredients and proceed 1 minute, speed 3. Pour into a mould and bake 1 hour.

Serve alone with a salad or as an accompaniment to meat.
