Crème pâtissière - Pastry cream

S'il y a bien une raison pour laquelle je me félicite d'avoir acheté un Thermomix, c'est la réalisation aisée de pâtes, sauces et crèmes diverses. Pour la première fois, il en faut bien une n'est-ce pas, j'ai fait une crème pâtissière aujourd'hui. C'est désarmant de simplicité, de rapidité et c'est super bon...

Cette recette se trouve dans le livre "A table avec Thermomix".

500 g de lait
40 g de farine
2 œufs entiers
2 jaunes d'œuf
1 sachet de sucre vanillé
70 g de sucre en poudre

J'ai remplacé le sucre vanillé par de l'extrait de vanille.

Mettre tous les ingrédients dans le bol du Thermomix et régler sur 90°C, vitesse 4, 7 minutes.

A la sonnerie, mixez 5 secondes à vitesse 9

Si vous voulez conserver la crème quelques heures avant utilisation, mettez un film étirable dessus, au contact de la crème, pour éviter la formation d'une peau.



Tarte crème pâtissière et reines-claudes

This recipe is in the book "A table avec Thermomix".

500 g of milk
40 g of flour
2 whole eggs + 2 egg yolks
10 g vanilla sugar
70 g of powdered sugar

I replaced the vanilla sugar by vanilla extract.
Put all ingredients in the bowl of the thermomix and set to 90 ° C/speed 4 for 7 minutes.
At the ringing tone, mix 5 sec/Vit 9.
If you want to keep it a few hours before use, put a clingfilm on it, in contact with the cream, to avoid the formation of a skin.

Feuilleté Jambon fromage - Ham and cheese in puff pastry

Voici une feuilleté facile à réaliser, avec ce qui se trouve dans les réserves et dont l'apparence un fois passé au four à de la gueule.

Eloïse, ma petite fille de 10 m'a donné un sacré coup de main et le verdict de ma petite Julie a été sans appel: C'est super bon Papy, il faudra en refaire.

Merci encore à Cooking Julia qui a proposé cette recette.

1 pâte feuilletée Thermomix
(Ou à défaut, une pâte toute prête du commerce, mais c'est moins bon)
1 càs de moutarde à l'ancienne
3 tranches de jambon
9 tranches de fromage fondu pour croque-monsieur
1 jaune d’œuf
Facultatif: un peu de râpé pour gratiner le dessus

Préchauffer le four à 190°. Préparer la pâte feuilletée au Thermomix.

Au centre, sur une bande de 10 cm de large environ, badigeonner légèrement de moutarde. Couper les tranches de jambon en deux et en disposer une sur la moutarde. Placer ensuite 3 tranches de fromage sur le jambon, puis une nouvelle couche de jambon, puis de fromage, et enfin de jambon.

Couper la pâte non recouverte en bandelettes horizontales avec une roulette à pâtisserie.

En commençant par un bout, replier chaque bande sur la farce, légèrement en biais, en alternant une bande de chaque côté. Veiller à ce qu'il n'y ait pas de trous entre les bandes.

Passer un peu de jaune d’œuf battu sur le feuilleté et enfourner pour 30 minutes environ, jusqu'à ce que la surface soit bien dorée. Servir très chaud pour que le fromage soit coulant. Le feuilleté est très bon accompagné d'une salade verte.

1 puff pastry Thermomix
(Or alternatively, a puff pastry from the shop, but it is less good)
1 tbsp of old-fashioned mustard
3 slices of ham
9 slices of cheese for sandwiches
1 egg yolk beaten with a pinch of salt
Optional: Top with some grated cheese.

Preheat oven to 190 °. Prepare the pastry according to the Thermomix recipe.

In the centre, on a strip of 10 cm wide, lightly brush mustard. Cut the slices of ham into two and dispose on the mustard. Place then 3 slices of cheese on ham, then a new layer of ham, and cheese, and ham finally.

Cut the dough not covered in horizontal strips with pastry wheel.

Starting at one end, fold each band on the filling, slightly bias, alternating a band on each side. Ensure no holes between the bands.

Spend a bit of egg yolk beaten on the puff pastry and bake for about 30 minutes, until the surface is golden brown. Serve very hot so the cheese is runny. The pastry is very good accompanied by a green salad.

Colle à papier - Glue for paper

Cette fois, ce n'est pas une recette de cuisine que je donne mais une recette de colle à papier. J'utilise le Thermomix pour faire des gelées et confitures et j'aime bien apposer une étiquette sur mes bocaux. Les étiquettes auto-collantes du commerce ne me conviennent absolument pas car trop pénibles à ôter quand le pot est vide. L'astuce qui consiste à utiliser du lait comme colle ne me va pas non plus, les étiquettes ne tiennent pas. Finalement, cette colle à la farine me sied bien: l'étiquette est facile à ôter mais tient très bien sur le pot et résiste à la manipulation.

Il nous faut :

10 g de farine de blé

10 g de sucre
125 g d'eau
Huile essentielle de votre choix

Mettre le tout dans le bol du Thermomix, puis programmer 7 min, 90°C, V2.Aromatiser  de quelques gouttes d'huile essentielle de votre choix, mélanger et mettre dans un petit pot.

This time, this is not a recipe I give but a recipe of glue for paper. I use the Thermomix to make jellies and jams and I like put a label on my jars. The self-adhesive labels of trade absolutely unsuitable me as too difficult to remove when the pot is empty. The trick that is to use milk as glue does not work satisfactorily as the labels does not stick properly. Finally, this flour glue befits me well: the label is easy to remove but fit very well on the pot and is resistant to manipulation.

You will need:


10 g of wheat flour

10 g sugar
125 g of water
Essential oil of your choice

Put everything in the Thermomix Bowl, then program 7 min, 90 ° C, V2

Flavor with a few drops of essential oil of your choice, mix and put it in a small pot.

Gratin provençal - Provence gratin

Je me suis inspiré de 2 recettes qui viennent de paraître sur l'excellent blog Cooking Julia : Le gratin d'aubergines au parmesan et le gratin de courgettes. Comme d'habitude, j'y ai été de mes petites modifications.

Ainsi, j'ai fait un mélange des 2 recettes, j'ai remplacé la crème fraîche par de la crème de soja et le lait par du lait d'amande. Le résultat était excellent et je recommencerai.

Pour 4 personnes:

1 belle aubergine
2 petites courgettes
Tomates olivettes
Huile d'olive

3 gousses d'ail
50 g de crème de soja
150 g de lait d'amandes
3 œufs
50 g de parmesan râpé
Thym, romarin, laurier séché en poudre
Sel à la sauge

Pour gratiner:
60 g d'emmental râpé

Découper l'aubergine en tranches d'un demi cm d'épaisseur. Huiler les tranches sur les 2 faces avec un pinceau trempé dans un peu d'huile d'olive, disposer les tranches sur une lèchefrite recouverte d'un papier cuisson et enfourner 30 min à four préchauffé à 200°C. Retourner à mis cuisson.

Pendant ce temps, mettre tous les autres ingrédients dans le bol du Thermomix à l'exception de l'emmental. Mélanger 30 sec à vitesse 4.

Arranger les tranches d'aubergine et de courgette dans un sabot. Recouvrir de tomates olivettes coupées en 2. Verser la préparation dessus et recouvrir d'emmental râpé.

Enfourner 35 min.

Servir avec un mesclun.

I was inspired by 2 recipes that have just been published on the excellent blog Cooking Julia: the gratin of eggplant with parmesan cheese and the zucchini gratin. As usual, I did some small changes.

Thus, I made a mixture of the both recipes, I replaced the crème fraîche by cream of soy and milk by almonds milk. The result was excellent and I will cook it again.

For 4 servings:

1 nice Eggplant
2 small Zucchini
Tomatoes olivettes
Olive oil

3 cloves garlic
50 g soy cream
150 g of almond milk
3 eggs
50 g grated Parmesan cheese
Thyme, Rosemary, dry laurier powder
Sage salt

For the gratin:
60 g grated emmental

Cut the Eggplant into slices half cm thick. Rub the slices on both sides with a brush dipped in a bit of olive oil, arrange the slices on a pan covered with baking paper and bake 30 min in preheated oven at 200 ° C. Turn slices after 15 min cooking.

Meanwhile, put all other ingredients into the bowl of the Thermomix except the emmental. Mix 30 sec at speed 4.

Arrange the slices of Eggplant and zucchini in an oven safe plate. Cover with half-tomatoes. Pour the mixture over the vegetables and top with grated emmental.

Bake 35 min.

Serve with a Mixed Greens salad.

Soupe de carottes au gingembre - Ginger-carrots soup

Après quelques jours d'agapes familiales, il nous a fallu faire une petite pause et, pour employer un mot à la mode, se détoxifier... Après une recherche rapide sur le web, je suis tombé en arrêt sur cette recette. Un pur régal à faire et à refaire. Adaptée au Thermomix, elle se réalise en moins de 30 minutes.

Si vous ne ressentez pas le besoin de vous détoxifier, ajoutez dessus un peu de feta émiettée et quelques croutons...

Soupe de carottes-gingembre

Pour 4 portions :

2 càs d'huile d'olive extra-vierge
1 oignon rouge
1 gousse d'ail
Gingembre (env. 3 cm)
4 carottes
1 pomme de terre
1 càc concentré de bouillon de boeuf
1000 g d'eau
1 yaourt
1 càc de miel
1 càc de thym frais, effeuillé
Poivre fraîchement moulu

Hacher l'oignon rouge, ail et gingembre, 15 secondes, vitesse 5. Ferraille vers le bas avec la spatule et ajoutez l'huile. Laissez cuire 5 min, vitesse 2, 100° C.

Ajouter les carottes, pommes de terre, l'eau et le concentré de stocks de viande bovine. Faites cuire à 100° C, 18 min, vitesse 2.

A la sonnerie, ajouter 1 yaourt, miel, thym et poivre fraîchement moulu. Mélanger 15 secondes à vitesse 7.

After a few days of family feasts, it took us a small break and, to use a word in fashion, to detoxify... After a quick search on the web, I stumbled in judgment on this recipe. A pure delight to make and remake. Adapted to the Thermomix, it is prepared in 20 minutes or so.

If you do not feel the need to detoxify, add on a bit of crumbled feta cheese and a few croutons...

Ginger-carrot Soup

For 8 servings:

2 tbsps extra-virgin olive oil
1 red onion
1 clove garlic
Ginger (ca. 3 cm)
4 carrots
1 med potato
1 tsp beef stock concentrate
1000 g of water
1 plain yogurt
1 tsp honey
1 tsp fresh time
Freshly ground pepper

Chop the red onion, garlic and ginger, 15 sec, speed 5. Scrap down with the spatula and add the oil. Let cook 5 min, speed 2, 100°C.

Add carrots, potato, water and the beef stock concentrate. Cook at 100°C, 18 min, speed 2.

At the ringing tone, add 1 plain yogurt, honey, thyme and fresh ground pepper. Blend 15 sec at speed 7.
