Scones


J'ai mis la charrue avant les bœufs. J'ai fait du lemon curd mais avec quoi le servir ? Avec des scones bien sur. Le blog "Cooking Julia" en donne justement une superbe version que mes petites filles ont adoré pour leur 4 heures. Comme à l'accoutumé, j'ai légèrement modifié la recette et voici ce que ça donne. Mes modifications sont entre parenthèses

250 g de farine
(200 g de farine et 50 g de farine de chataignes)
1 sachet de poudre à lever
1/2 càc de sel fin
50 g de beurre
(Beurre demi-sel)
150 g de lait ribot
(150 g de lait et 1 càc de vinaigre blanc)

Préchauffer le four à 210°C, chaleur tournante.

Mettre le lait, le beurre et le vinaigre dans le bol du Thermomix. Procéder à vitesse 2, 3 minutes, 37°C.

Ajouter le reste des ingrédients puis 1 minute fonction épi.

Agglomérer la pâte et l'étendre sur une épaisseur de 2 cm. Découper des ronds à l'emporte pièce. Agglomérer la pâte restante et procéder de même. Continuer jusqu'à épuisement de la pâte.

Enfourner 15 minutes et savourer les bonnes effluves qui s'échappent du four....

A servir avec... du lemon curd bien sur. Ca tombe bien, je viens d'en faire...

Agglomerate the dough and extend it to a depth of 2 cm. Cut out circles. Agglomerate the remaining dough and repeat this procedure. Continue until all the dough is used.

Bake 15 minutes and enjoy the good smell that escape from the oven...

Serve with... lemon curd of course. Good idea, I just prepared some...




Crème de citron - Lemon curd

Une recette anglaise classique. La recette est celle de Catherine Hostettler que j'ai adaptée pour mon Thermomix.

Pour un gâteau:

1 gros citron, non traité
90 g de sucre en poudre
25 g de beurre demi-sel
2 jaunes d'œuf
1 càs de fécule de maïs délayée dans un peu d'eau

Peler le zeste avec un couteau économe en faisant attention à ne pas prélever le blanc qui est amer puis presser le citron. Mettre le zeste dans le bol du Thermomix et donner 2 ou 3 impulsions sur le bouton turbo.

Ajouter le sucre et râcler vers le bas avec la spatule.
Mixer 10 sec à vitesse 10.
Râcler vers le bas et recommencer l'opération.

Ajouter le reste des ingrédients. J'ai également ajouté la pulpe de citron sans les pépins, bien sur.

Régler 7 min, 90°C, vitesse 3.

A la sonnerie, lisser la crème de citron 10 s à vitesse 10.

Et voilà.

One classic English recipe. This one is from Catherine Hostettler and adapted to my Thermomix.

For 1 cake:

1 large lemon, untreated
90 g powdered sugar
25 g salted butter
2 egg yolks
1 case of cornstarch mixed with a little water

Peel the zest with a peeler paying attention to unpick the white that is bitter and then squeeze the lemon. Put the zest in Thermomix Bowl and pulse 2 or 3 times on the turbo button.

Add the remaining ingredients. I also added lemon the seedless pulp, ofcourse.

Set 7 min, 90 ° C, 3-speed.

Pain de campagne - Farmhouse bread

Mes petites filles voulaient faire du pain. Qu'à cela ne tienne, le Thermomix est là et comme toujours j'ai adapté la recette à mes besoins. J'ai simplement pris garde de n'utiliser que de l'eau tiède. Au delà du plaisir de faire mon pain moi même, du plaisir des fillettes à modeler la miche de pain, des bonnes odeurs de cuisson, j'étais heureux de voir leurs yeux briller au vu du résultat.

500 g de farine
Graines de tournesol
1 cac de sel
2 càc de levure lyophilisée
310 g d'eau tiède

Mettre tous les ingrédients dans le bol du Thermomix, régler 4 min 30 sur fonction pétrissage.

Puis 2 h de pousse sous un torchon humide.

Ensuite, il a fallu rabattre le pain et former une boule, et laisser pousser environ 1 heure.

Quand il a doublé de volume, signer et enfourner 20 min à four préchauffé à 250°C en jetant 1/2 verre d'eau sur la sole.

Puis 20 min à 180°C

Laisser refroidir sur une grille.

Then bake 20 min at 180 ° C.

Let cool on a rack.

Sauté de porc au lentilles - Sauteed pork with lentils

Nous étions nombreux aujourd'hui à table: 4 adultes et 5 enfants. Eh bien, contrairement à ce qu'on pourrait croire, le Thermomix a été d'une grande aide et a permis de cuisiner ce sauté de porc pour tous. Après avoir feuilleté de web, je me suis inspiré de la recette de Christalie, sauté de porc sauce moutarde, recette que j'ai légèrement modifiée et à laquelle j'ai ajouté la cuisson de lentilles vertes.

Ingrédients:

1 belle échalote
1 gousse d'ail
500 g de lentilles
900 g de sauté de porc en cubes
100 g de lait
600 g d'eau
1 càc de concentré de bouillon de légumes
Sel et poivre
1 càs de moutarde de Dijon
Pour la finition :
1 càs de Maïzena
200 ml de crème fraîche
1 càs de moutarde à l'ancienne

Mettre l'échalote et la gousse d'ail dans le bol du Thermomix. Hacher 10 sec à vitesse 5. Racler ver le bas.

Ajouter le lait, l'eau, un tour de moulin à poivre, le concentré de légumes et la cuiller de moutarde.

Installer le panier avec les lentilles puis le Varoma avec la viande.

Programmer 30 min, Varoma à vitesse mijotage.

A la sonnerie, verser 1/2 litre d'eau chaude puis poursuivre 1/2 heure avec les mêmes paramètres. A la sonnerie, débarrasser dans le plat de service à garder au chaud.

Dans le bol, verser tous les ingrédients de la finition et programmer 5 min, 90°C Vitesse 1.

Verser sur la viande et les lentilles. Envoyer.

1 tbsp of Dijon mustard
For finishing:
1 tbsp of Cornflour
200 ml of crème fraîche
- Sour cream works fine too
1 tbsp of old-fashioned mustard

Put the shallot and garlic clove in Thermomix Bowl. Chop 10 sec at speed 5. Scrape down.

Add the milk, water, pepper, Thermomix vegetable concentrate and the spoon of mustard.

Install the basket with lentils then the Varoma with meat.

Set 30 minutes, Varoma, speed simmering.

At the ringtone, pour 1/2 litre of hot water and then continue 1/2 hour with the same parameters. At the buzzer, put in the serving dish and keep warm.

In the Thermomix bowl, combine all ingredients for finishing and set 5 min, 90 ° C speed 1.

Pour over meat and lentils. Enjoy.

Poulet au curry - Chicken curry

Mes petits enfants étaient à la maison et je voulais leur cuisiner quelque chose qui leur plait. Du poulet ? Du lait de coco ? du curry ? Eh bien voilà de quoi leur faire un excellent curry de poulet à ma façon.

Pour 2 adultes et 3 gremlins ayant bon appétit il vous faut:

500 g de blancs de poulet découpé en cubes
marinés 1 heure dans:
Le jus d'un citron
2 càs de sauce soja
Puis :
20 g d'huile de tournesol
1 gousse d'ail
1 belle échalote
200 g de lait de coco
350 g d'eau
1 càs de curry en poudre
Sel & poivre
1 càc de bouillon de légumes Thermomix
4 petites courgettes
1 tomate bien ferme
Pour la finition :
1 càc de poudre à curry

Eplucher l'échalote et l'ail puis coupez la courgette en rondelles. Coupez la tomates en dés.

Commencer par hacher l'échalote et l'ail dans le bol du Thermomix 10 s à vitesse 5. Racler vers le bas, ajouter 20 g d'huile et faire fondre 5 min à 100°C, vitesse 2.

Ajoutez le lait de coco, l'eau, le bouillon, la càs de curry. Réglez 7 min, Varoma et vitesse 2.

A la sonnerie, installez le Varoma avec les légumes et le poulet sur le plateau. Réglez 20 min, Varoma, Vitesse 2.

A la sonnerie, ajoutez 1 càc de curry et brassez 1 minute , vitesse 3.

Servez sur un riz thaï Hom Mali.

Notes:

L'ajout de curry au dernier moment a pour but de renforcer la saveur du plat.

J'aurais pu cuire le riz dans le panier cuisson mais je préfère de loin le cuire un peu à l'avance au cuit-riz.

4 small Zucchinis
1 firm tomato
For finishing:
1 tsp of curry powder

Peel the shallot and garlic and then cut the zucchini into slices. Cut the tomatoes into cubes.

First chop the shallot and garlic in the bowl of the Thermomix, 10 s at speed 5. Scrape down, add 20 g of oil and proceed 5 min at 100 ° C and speed 2.

Add the coconut milk, water, stock concentrate, the tbsp of curry. Set 7 minutes, Varoma and speed 2.

At the ringtone, install the Varoma with vegetables and chicken on the platter. Set 20 minutes, Varoma, speed 2.

At the ringtone, add 1 tsp of curry and stir 1 minute, speed 3.

Serve on a thai Hom Mali rice.

Notes:

The addition of curry at the last moment is designed to enhance the flavor of the dish.

I could Cook rice in the cooking basket but I far prefer to cook it a little in advance with the rice cooker.
