Emincé de bœuf aux champignons - Sliced beef with mushrooms

Nous avions acheté à Carrefour, notre hyper local, un morceau de bœuf sous la dénomination de "tende de tranche" pour fondue. Nous en avons fait mariner une partie une nuit au frigo puis cuisiné à la plancha. Ce fut une catastrophe, nous avons eu une viande dure, coriace et peu goûteuse.

Partant de ce constat, nous avons décidé de cuire le restant en sauce. Sans surprise, c'était bien meilleur...

Une viande de 3ème catégorie, certes longue à cuisiner, mais oh combien plus goûteuse devrait donner de bon résultats.

Pour 2:

300 g de bœuf
1 petite boite de champignons de Paris
1 oignon
1 gousse d'ail
1 càs d'huile
Sel et poivre
1 bouquet garni
250 g d'eau
100 g de vin blanc sec
1 càc de concentré de bouillon de légume Thermomix
1 càs de moutarde à l'ancienne
1 càs de crème fraîche épaisse
10 g de beurre malaxé avec
20 g de farine
1 càs de persil haché

Emincez le bœuf. Epluchez l'oignon et la gousse d'ail.

Mettez l'oignon et l'ail dans le bol du Thermomix et hachez les 3 s à Vitesse 5. Râclez avec la spatule vers le bas, ajoutez une cuiller à soupe d'huile, la viande et programmez 8 minutes, sens inverse, vitesse mijotage, température varoma.

A la sonnerie, ajoutez l'eau, le bouquet garni, le concentré de bouillon et les champignons de Paris. Salez et poivrez. Programmez 1 heure, 100°C, sens inverse, vitesse mijotage.

Au bout de ce temps, ajoutez la moutarde, le beurre manié et la crème fraîche. Prolongez la cuisson, avec les même paramètres de 4 minutes.

Servez sur des pâtes et parsemez de persil haché.

Notes:

- Il nous restait des pâtes de la veille, nous les avons réchauffées au Varoma.
- Nous avons ajouté un peu de purée de patates douce pour équilibrer avec des légumes

1 clove garlic
1 tbsp of oil

100 g of dry white wine
1 tsp Thermomix concentrate vegetable stock
1 tbsp of old-fashioned mustard
1 tbsp of thick cream
10 g of butter mixed with
20 g all purpose flour
1 tbsp of chopped parsley

Slice the beef. Peel the onion and the clove of garlic.

Put the onion and garlic in the Thermomix Bowl and chop 3 s at speed 5. Scrape with a spatula to the bottom, add 1 tablespoon oil, the sliced meat and proceed 8 minutes, reverse, simmer speed, varoma temperature.

At the ringtone, add water, bouquet garni, Thermomix concentrate vegetable stock and mushrooms. Salt and pepper. Program 1 hour, 100 ° C, reverse, simmering speed.

After this time, add the mustard, beurre manié, and sour cream. Extend the cooking, with the same parameters of 4 minutes.

Serve on pasta and sprinkle with chopped parsley.

Notes:

-We had pasta of the day before, we heated them in the Varoma.
-We have added a bit of sweet potato puree in order to balance with some vegetables
