Bouillon concentré de poulet - Chicken stock concentrate

J'avais une bête escalope de poulet qui se morfondais au fond du frigo et je ne savais pas comment l'utiliser. J'avais déjà fait un bouillon concentré de légumes et bouillon concentré de bœuf, pourquoi ne pas faire un bouillon concentré de poulet.

J'ai fouillé la blogosphère à la recherche d'une recette. Celle qui suit a été relayée par de nombreux blogs aussi je suis dans la peine pour citer toutes mes sources. Je l'ai bien sur adaptée à mes besoins

300 g de poulet sans peau
200 g de légumes aromatiques :
- celeri, oignon, ail, poireau, coupés en morceaux
Herbes aromatiques :
romarin, thym, persil, laurier
150 g de gros sel
100 g de vin blanc
1 clou de girofle
6 grains de coriandre

Placer tous les ingrédients dans le bol et mixer 10 secondes / vitesse 7.

Programmez 25 minutes / Varoma / vitesse 2. Cuire en posant le panier de cuisson à la place du gobelet doseur pour éviter les projections.

A la sonnerie, enlever le panier et mettre le gobelet doseur puis mixer 1 minute / vitesse 10.  Verser la pâte obtenue dans un bocal à fermeture hermétique et laisser refroidir.

Conserver au réfrigérateur. Grâce à sa teneur en sel, cette préparation se conserve plusieurs mois.

Utilisation :

Utiliser une cuiller à café pour 500 grs d'eau.

Place all ingredients in the bowl and mix 10 seconds / speed 10

Cook 25 minutes, Varoma, speed 2, placing the simmering basket instead of the measuring cup onto the mixing bowl lid.

The ring, remove the basket and put the measuring cup then mix 1 minute / speed 10. Pour the dough obtained in an airtight jar and let cool.

Keep it in the fridge. Thanks to its salt content, this preparation will keep several months.

Usage:

Use a teaspoon to 500 g of water.
