Cakes en bocaux - Cake in a jar

Tout à commencé il y a quelques temps par une émission, 100% Mag sur M6, dans laquelle passait Lilly et ses fameux cakes en bocaux. Puis, un peu de temps est passé et je suis tombé sur un site, La cuisine de Lily, site dont le propriétaire était justement passé dans 100% Mag. J'ai également fouillé la blogosphère et je me suis aperçu que cette idée de mettre des gâteaux en bocaux se retrouve sur de nombreux sites aussi bien français qu'anglo-saxons. La plupart des blogs français se réfèrent à "La cuisine de Lilly", mais j'ai malheureusement vu un site qui n'hésite pas à faire un copier-coller servile laissant ainsi penser qu'il a la paternité de la chose. Il y a des voyous partout

Mais rendons à Jules ce qui appartient à César. Si l'idée n'est pas nouvelle, les façons de procéder peuvent largement différer, le blog La cuisine de Lilly a l'immense mérite de clarifier les choses et de les vulgariser.

Pour mon premier essai, j'ai fait un cake à la farine de châtaignes et j'ai bien sur mis à contribution mon Thermomix.

Cake à la farine de châtaignes en bocaux

100 g de beurre
100 g de sucre en poudre
2 œufs
95 g de farine de blé
45 g de farine de châtaignes
5 g de poudre à lever (1)
Beurre pour les bocaux
Poudre d'amande

Commencez par mettre le sucre dans le bol du TM31 et pulvérisez 10 sec à V10. Raclez les parois vers le bas.

Ajoutez le beurre en morceau et réglez 2 minutes, 37°C, pétrin.

Ajoutez les œufs et mélangez 30 sec à V4.

Ajoutez les farines ainsi que la poudre à lever. Réglez sur 2 minutes, pétrin.

Passez les bocaux à l'eau bouillante ainsi que leur couvercle. Beurrez les bocaux et mettez de la poudre d'amandes. Ceci facilitera le démoulage.

A ce stade, j'ai divisé la pâte en 2 et dans une j'ai mélangé un peu de chocolat amer en poudre et, en utilisant une poche à douille, j'ai alterné les couches de pâte.

Nettoyez les bords des bocaux avec un papier absorbant.

Cuisson bocal ouvert, 30 min à 180°C.

Dès la sortie du four, placez le couvercle et retournez le bocal sur un torchon, comme pour des confitures.

On entend un petit "plop", c'est le couvercle qui se rétracte quand le bocal refroidi, signe que la stérilisation est bien faite.

A déguster sous 6 mois.

For my first test, I made a cake with chestnut flour and I of course put to contribution my Thermomix.

Chestnuts flour cake in a jar

100 g butter
100 g powdered sugar
2 eggs
95 g of wheat flour
45 g of chestnut flour
5 g of backing powder
Butter for jars
Almond powder

Start by putting sugar in the bowl of the TM31 and proceed 10 sec at speed 10. Scrape sides down.

Add the butter into pieces and set 2 minute, 37 ° C, kneading position.

Add the eggs and mix 30 sec at speed 4.

Add flours and backing powder. Set to 2 minutes, kneading position.

Pass the jars in boiling water as well as their cover. Rub with butter inside the jars and dust with ground almonds. This will ease the turning out of the cakes.

At this stage, I divided the dough in 2 and I mixed a bit of bitter chocolate powder in one half and, using a pastry bag, I alternated the layers of dough.

Clean the edges of the jars with a paper towel.

Backe the open jar, 30 min at 180 °C.

Right out of the oven, place the lid and return the jar on a cloth, as for jams.

A small 'plop' means it is the cover that retracts when the jar starts to cool, signs that sterilization is done well.

Enjoy it within 6 months.
